2 Tbsp lemon juice
1/3 cup of sliced Kalamata olives
1/3 cup of crumbled feta cheese
1/3 cup of cherry tomatoes
2 Tbsp of shredded basil or parsley
Salt and pepper, to taste
Instructions
Optional: You can add more vegetables to this recipe to increase the fiber and protein. Try adding sliced cucumber, baby spinach, garbanzo beans, or green bell pepper.
