Blueberry and Goat Cheese Spinach Salad


½ bag of spinach (about 3 cups) 

½ cup of blueberries 

¼ cup of chopped walnuts

2 oz. goat cheese

Dressing of your choice


  1. In a large bowl, combine baby spinach, blueberries and walnuts. 
  2. Add the dressing little by little and toss until greens are well-coated.
  3. Taste and adjust seasoning with salt and pepper. Sprinkle crumbled goat cheese over top and serve.
  4. Makes 2 servings
