Herb Roasted Sweet Potatoes



Ingredients

2 sweet potatoes, peeled and cut into small cubes 

1 tsp kosher salt

1 tsp dried basil leaves

1 tsp dried thyme

½ tsp garlic powder

¼ tsp black pepper

¼ tsp red pepper

1 – 2 Tbsp extra virgin olive oil


Instructions

  1. Preheat oven to 450 °F. Line a cookie sheet with parchment paper and set aside.
  2. Combine all ingredients in a bowl. Toss to coat everything evenly. Spread in a single layer on prepared cookie sheet. Place in oven.
  3. Bake for 30 minutes, turning every 10 minutes. Makes 4 servings.
