Microwave Egg and Vegetable Scramble


1 tsp coconut oil

1 egg

1 Tbsp water

¼ cup sliced baby spinach

2 Tbsp chopped mushrooms

2 Tbsp shredded cheese

2 cherry tomatoes, sliced

½ Avocado


  1. Coat an 8 oz.  ramekin or custard cup in coconut oil.
  2. Add egg, water, spinach, and mushrooms. Beat with a fork.
  3. Microwave on high for 30 seconds. Stir and then microwave until egg is almost set, about 30 seconds. 
  4. Top with cheese and tomatoes and 1/2 avocado
