Mustard Dill Baked Salmon


1 Tbsp olive oil, divided 

1/3 cup dill, fresh chopped or dried

3 Tbsp of Dijon mustard

1½ lbs. center-cut salmon fillet with skin

2 tsp minced garlic


  1. Mix together ½ tbsp oil, mustard, dill, salt, pepper, and garlic.
  2. Marinate fish in sauce for 30 minutes to an hour. Leave on the skin. 
  3. Preheat oven to 400 °F. 
  4. Lightly oil baking sheet with ½ tbsp. oil. Place salmon, skin side down, on prepared sheet.
  5. Bake about 20 minutes, until salmon is opaque in center.
